How to prepare kleija
Adopting kleija as a main dish by chefs allows us to clarify the method of preparing it, which is as follows:

1- Ingredients for kleija dough
·     A cup of white flour.

·     4 cups of brown flour.

·     A cup of vegetable ghee.

·     Half a cup of powdered milk.

·     A quarter cup of powdered sugar.

·     A cup and three-quarters of a cup of warm water.

·     A pinch of salt.

2- Its amounts
·     A cup of unpowdered sugar.

·     One and a half tablespoons of crushed black lemon.

·     A teaspoon of cardamom.

·     A teaspoon of ground ginger.

·     A teaspoon of cinnamon.

3- Preparation method
1. Mix both brown and white flour together in a mixing bowl.

2.  Add the amount of ghee, and be sure to rub it well with your hand. You can also use an electric mixer until the flour absorbs the amount of ghee.

3. Add the amount of sugar, milk and salt and rub well.

4. Then knead it well with water.

5. Let the dough rest for a quarter of an hour.

6.  Shape the dough into balls the size of a maamoul.

7.  Leave it to rest again for a quarter of an hour.

8.  Prepare the filling by mixing all the ingredients together.

9.  Fill the dough with a spoonful of filling.

10. Make sure to seal the dough well and shape it with the klija shaper.

11. Use egg yolk to brush the face.

12. Place it in the preheated oven at 180 degrees for a quarter or a third of an hour until it is browned on all sides.

How to make kaleja with dried fruit
Dried fruit helps give the kaleja a distinctive taste, so you can use it in stuffing. The preparation method is as follows:

Ingredients
·     3 cups of brown wheat flour.

·     A cup of white flour.

·     A cup of melted butter.

·     A quarter cup of powdered milk.

·      A quarter cup of sugar.

·     A teaspoon of instant yeast.

·     A teaspoon of vanilla.

Filling amounts
·     Pieces of dried fruit cut into small pieces.

·      A teaspoon of kleija spices.

·      2 tablespoons of white honey.

How to prepare
1. Add the dry ingredients to a deep bowl, mixing well.

2. Distribute the amount of butter over the ingredients.

3. Knead the dough with warm water.

4. Leave the dough for half an hour to rest.

5. Divide the dough into equal pieces.

6.  Make a hole in each piece of dough, and fill it with the filling.

7. Bake in a preheated oven at 170-180 for 20-30 minutes.
